How to scale a recipe well
Multiplying every amount gets you most of the way. These are the parts that need a little more thought.
Weigh when you bake
Cups and spoons pick up small errors, and scaling multiplies them. Grams stay accurate at any size, which matters most for flour, sugar and butter.
Round the things you can't split
Eggs, cans and packets rarely divide evenly. Round to the nearest whole one, and adjust liquid a little if you rounded down a large egg.
Season, then taste
Salt, chili and strong spices don't always need the full multiple. Add about three quarters of the scaled amount, taste, and add the rest if it needs it.
Choose the right pan
A doubled batter in the same pan is deeper and bakes differently. Use a larger pan or two pans so the depth stays close to the original.
Times don't simply double
Oven temperatures stay the same. A larger roast or a deeper pan needs more time, but not twice as much, so start checking early and go by doneness.
Raising agents scale, up to a point
Baking powder, soda and yeast scale with the recipe for a double or triple batch. Much larger batches are better made as several smaller ones.
